Fathead dough is a wonderful recipe for making Fathead pizzas. Fathead dough is a combination of cream cheese, almond flour, and cream cheese. It is a great low carb alternative for pizza crusts.
I made this recipe for my wife just last week. She came home and said, “This recipe is going to be the death of me.” I agreed and made it for myself the next day. I woke up the next morning and I was not hungry. I felt great and did not want to eat. This is very good for starting a keto diet or just for losing excess weight.
Ever seen a sausage ball recipe, but wondered if you could make them with keto friendly ingredients? Well, here you go! You can use any type of sausage (apparently they are easier to roll with ground beef), but I chose to go with a meatless chicken sausage. I made these in the evening, and then froze all but two. I used a 4-inch mini muffin pan, but if you have a regular baking pan you can use that. I also used a glass loaf pan, but a large square baking pan would work just fine as well.

I’m not a big fan of morning sausage, but that’s more Matt’s territory. I’d create little burgers out of these beauties by using ground beef and adding chopped onion and tomato. Breakfast will never be the same once you try these Keto Sausage Balls. They’re a fantastic way to get the whole family engaged in the kitchen. You cook the meat as the youngsters wrap the dough around it! They can be made in about 30 minutes and are delicious at any time of day. Make these keto sausage balls this weekend for meal prep and bring them to work all week.

Keto Sausage Balls

Instructions:
Sausage Balls

Preheat the oven to 350°F and a medium pan to medium-high heat.

Make 6 sausage balls by dividing the sausage into 6 pieces. Cook until done in the heated skillet. Set aside to cool on a platter.
Dough Fathead

Microwave the mozzarella and cream cheese for 30 seconds on high in a microwave-safe mixing bowl. Using a fork, mix everything together until it’s equally distributed.

Combine the almond flour and the egg as completely as possible. If it still doesn’t seem to be coming together, microwave for another 20 seconds.

If required, use a spatula to mix the ingredients. Pour the dough onto a parchment paper-lined baking sheet. Use your hands to integrate everything if it isn’t equally mixed.

Make 6 even balls out of the dough.

Place the cooked sausage in the middle of each ball, flattening it out with your hands or rolling it out with another piece of paper on top (to prevent sticking). Pull the side up and put the sausage ball, seam side down, on a baking sheet lined with parchment paper.

Repeat with the remaining 6 sausage balls and place them on the baking sheet.

Bake for 10-15 minutes, or until the top is golden brown.

Refrigerate for up to 5 days in an airtight sealed container.
