While this may seem like the polar opposite of what we’ve been taught over the past 30 years, its actually a very good idea.

What Are the Carbs in a Beef Taco Salad?

The beauty of this keto taco salad casserole dish is that you can simply adjust the carb count depending on what you have on hand or what you want to add! The carbohydrates will come from the vegetables you use. So, if you’re anything like me, you’ll have a higher carb version from the additional onions, while if you’re anything like Matt, you’ll have a lower carb version by eliminating the onions and bell peppers entirely!

Cook the seasoned ground beef and create the casserole with only the cheese, then serve the cooked vegetables on the side to add as needed for your weekly meal prep!

That’s an excellent question, and one I ask myself often. Mexican food is one of our favorites, but it may be difficult to really appreciate it since so much of it is made up of carbohydrates like tortillas and rice.

We had to find a way around it since we love it so much, and we did! If you think outside the box, you’ll be amazed at how quickly you can come up with some alternatives. You may begin with the following recipes:

Reheating and storing

When it comes to meal prep dishes like this keto taco salad casserole, I want to know how long it will stay in the fridge, whether it would freeze well, and how to keep it fresh.

When compared to a breakfast casserole, this dish will keep much longer in the fridge and even freeze nicely. Eggs are finicky and don’t keep for very long, so I’d set a strict 5-day restriction on anything containing eggs in the fridge. This dish, on the other hand, will keep in an airtight container for at least 10 days and reheats well in the microwave! It can even be frozen for up to a month.

Any fresh toppings (lettuce, sour cream, cheese, etc.) should be packed separately and added to the cooked dish as needed. This will ensure that nothing gets soggy and that each mouthful is as fresh as possible!

Even your fussy non-keto family members will love it and will not feel cheated by the absence of carbohydrates. Casserole of Keto Taco Salad

This quick Keto Taco Salad Casserole mixes fresh vegetables with meaty taco flavors for a delicious evening meal!

25-minute total time

8 person servings

370 calories per serving

Time to prepare: 5 minutes

Time to prepare: 20 minutes

Instructions:

  • Preheat the oven to 350 degrees Fahrenheit and a large skillet over medium-high heat.

  • Combine the round beef, onion, and bell pepper in a large mixing bowl. Cook until the meat is no longer pink and the vegetables are cooked through.

  • Chili powder, salt, cumin, garlic powder, oregano, red pepper flakes, and pepper are all good additions. Remove from heat after mixing with a spoon until spice is completely absorbed.

  • Fill a 9×13 baking dish halfway with the meat mixture. Mix in the diced tomatoes, black olives, and cheese until smooth.

  • Bake for 10 minutes, or until the cheese has completely melted and the flavors have melded.

  • Serve immediately with the remaining tomatoes, black olives, cheese, and shredded lettuce.

  • It’s best to keep it in the fridge for up to 10 days in an airtight container. If you plan on keeping leftovers, keep the fresh topping separate!
