What Makes Bone-in Chicken So Popular?

There are a slew of reasons why we prefer bone-in chicken, and after you read them, we’re certain you’ll agree! Bone in is a favorite of ours for the following reasons:

  1. The chicken is always juicier and never dry when it arrives.
  2. Anything roasted on the bone is much more healthy than anything roasted off the bone (i.e. glycine)
  3. It’s always skin on if it’s bone in, which implies more fat and taste.
  4. It’s a pain to get the bone out of the flesh.
  5. It’s always going to be more delicious!

In the situation of bone in versus bone out, you can’t compete on nutrition or taste. Consider purchasing bone-in skin-on chicken thighs the next time you’re thinking about buying boneless chicken thighs and live a happier, more delicious life!

These Oven Baked Drumsticks combine tender chicken and a creamy butter and herb sauce for a busy weeknight dinner! Keeping the bone in chicken makes this recipe juicier, more nutritious, more fatty, and more flavorful!

  • In a large cast-iron or oven-proof pan, melt 2 tablespoons butter over medium-high heat. Place chicken legs in a pan, without overcrowding them, and sear for 3-4 minutes, then turn and sear the other side until golden brown.

  • Place skillet in oven and roast for 18-20 minutes, or until an internal thermometer reads 162°F. Remove the skillet from the oven with care.

  • Return the pan to the burner over medium-low heat and remove the chicken to a dish.

  • Add the onion and cook, turning occasionally, until softened, approximately 2-3 minutes. Deglaze the pan with wine (or 1 cup broth), scraping the browned pieces with a wooden spoon. Bring the water to a boil.

  • Allow the wine and chicken broth to decrease by half until the mixture is thickened. Remove from heat and whisk in 3 tbsp cold butter until completely melted, then mix in lemon juice and fresh herbs. As required, season with salt and pepper.
