Instructions:

  • Preheat the oven to 375 degrees Fahrenheit.

  • Season chicken drumsticks with salt and pepper after patting them dry.

  • In a large cast-iron or oven-proof pan, melt 2 tablespoons butter over medium-high heat. Place chicken legs in a pan, without overcrowding them, and sear for 3-4 minutes, then turn and sear the other side until golden brown.

  • Place skillet in oven and roast for 18-20 minutes, or until an internal thermometer reads 162°F. Remove the skillet from the oven with care.

  • Return the pan to the burner over medium-low heat and remove the chicken to a dish.

  • Add the onion and cook, turning occasionally, until softened, approximately 2-3 minutes. Deglaze the pan with wine (or 1 cup broth), scraping the browned pieces with a wooden spoon. Bring the water to a boil.

  • Allow the wine and chicken broth to decrease by half until the mixture is thickened. Remove from heat and whisk in 3 tbsp cold butter until completely melted, then mix in lemon juice and fresh herbs. As required, season with salt and pepper.

  • Serve the chicken with the sauce from the pan.
